Introduction to a vegetable lover + a healthy snack!

Hello everyone.
My name is Maria and I am the new food editor here at Enfants Terribles Magazine.
My life is filled with vegetables and I am what you would call a veggie lover. I have my own small business called Vanløse Bluse where I do food styling and develop healthy and green recipes and I run a blog by the same name. In addition to all this I also started writing my first cookbook, which of course is filled with... vegetables and in the picture above you can see a sneak peek into some of the book's many dishes.

Here at Enfants Terribles you can 
expect to get lots of inspiration to eat more healthy and vegetables from me, I sneak vegetables into everything! 
But for now I will start
by wishing you a go weekend and sharing this recipe for a sweet and healthy weekend snack.

Caramelized peanuts with sesame and cocoa powder:
400 g unsalted peanuts
6 tablespoons sesame seeds
2 tablespoons cocoa
8 tablespoons maple syrup
salt

How to:
Heat a large frying pan up to high heat.
Roast the sesame seeds until golden. Remove from heat and set aside.
Roast the peanuts for 3-4 min. Keep an eye on them so they don't burn.
Add salt and cocoa powder, and mix it up in the pan with the peanuts.
Pour maple syrup on top and cover the peanuts .
Let the syrup boil up and then turn off the heat.
Then add the roasted sesame seeds and spread them well on the peanuts.
Spread the peanuts and sesame seeds on a baking sheet and let them cool off there.
