Emma Martiny's Cherry Ice Cream

The creamy part of a tin of coconut milk
100 grams cherries – pips removed
1 tablespoon of lemon juice
2 tablespoons of Maple Syrup
1 teaspoon of almond essence
1 teaspoon of vanilla essence

Keep the tin of coconut milk in the fridge for 24 hours, which will make the creamy part separate from the watery part. (The water can later be used for smoothies). Blend all ingredients to a lovely smooth pink cream and pour into 6 pop stick molds. Freeze for a minimum of 6 hours.

TIP: Almond and vanilla essence contains tiny amounts of alcohol, which prevents ice crystals in the ice cream.

Banana Split Bites

3 Bananas
100 grams of chocolate
Fun sprinkles
Ice cream

Use firm bananas and cut into 1 inch sections. Leave the peel on for easy handling, and with a melon baller, dig a well in the middle of each banana section.

Melt chocolate in the microwave and dip the bottom portion of the banana in chocolate and then dip it once again in some fun sprinkles. Place dipped bananas in the freezer for one hour.

Make ice cream scoops with the melon baller and complete with some sprinkles on the top.

Bon appétit and happy summer!
XOXO!
